Ingredients:

  • 1 cup butter, softened
  • 2 cups brown sugar, packed
  • 2 eggs
  • 1/2 cup molasses
  • 4 cups all-purpose flour
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 1/2 cup strong brewed Cafe Campesino coffee
  • 2 tablespoons water

Instructions:

  1. Preheat oven to 350°F
  2. Cream together butter, brown sugar, eggs, and molasses until light and fluffy
  3. In a separate bowl, sift together flour, ginger, cinnamon, cloves, and salt
