These chocolate truffles are not only delicious, luxurious and packed with fairtrade coffee flavor, they are also extremely easy to make. So you can look like you bought something fancy, and then say, "Actually, I made them myself!"

Melt chocolate on top of double boiler. When fully melted, remove from heat and beat in 2 tablespoons of butter at a time. Then beat in egg yolks, rum and heavy cream. Beat until smooth. Cover and chill until hardened.
Scoop 1 teaspoon of the chocolate mixture at a time and roll into a 1-inch ball. Push 1 coffee bean into center, using a wooden pick. Fill in hole with chocolate.
Sift together ground coffee beans and cocoa powder onto plate. Roll each covered coffee bean in coffee and cocoa mixture. Chill and gift, or serve.
